Honey & Lemon Chicken

    INGREDIENTS

    • 4 chicken high fillets, on the bone
    • Juice of 2 lemons
    • 3 tbsp honey
    • 1 tbsp wholegrain mustard
    • 2 garlic cloves, crushed
    • 1 tsp black pepper
    • 1 tsp salt
    • 1 cup green olives, pitted
    • ¼ bunch parsley
    • ½ bunch thyme

    DIRECTIONS

    1. Trim excess fat from the chicken thigh fillets. Cut small slits in the top of the chicken with a small, sharp knife.
    2. To make the marinade, whisk together lemon, honey, wholegrain mustard, garlic, pepper and salt, and coat the chicken. Allow to marinate for 20 minutes in a cool place.
    3. Preheat the Air Chef air frying oven to 180°C and turn the timer dial to 5 minutes.
    4. Once the ‘HEATING’ light goes off, turn the timer dial to 30 minutes.
    5. Place the marinated chicken into the Air Chef basket, basting excess sauce onto the chicken, and allow to cook. Turn over after 10 minutes and baste the chicken once again with the sauce.
    6. Once the chicken has finished cooking, remove from the Air Chef basket and allow to stand, covered, in a warm place for 5 minutes for the chicken to rest and finish cooking.
    7. Serve chicken with roasted potatoes and seasonal vegetables.

      Have to say looks really nice and would love to try it our but I don't have a Air Chef Air Frying oven. I only have a electric fan forced oven or a slow cooker... any info would be grateful

      You can also make this dish in the oven, not a problem.

      Hi Joanne, we simply drizzled some of the unused marinade over the chicken. :)
