I met Tim, my local butcher at the growers markets in Ramsgate near my place. We had a chat about the important things when buying and cooking meat. Let us take care of your wallet and your taste buds.

Which cut/type of meat is best for slow cooking?

Cheaper cuts of meat such as chuck steak and gravy beef. If you can get them on special, lamb shanks and best neck chops are great slow cooked.

What is the best way to cook a roast?

Depending on the roast, in a medium oven with a good splash of olive oil on the skin side up and a big pinch of rock salt to crisp up the top.

What is the best value cut of meat?

That would have to be a strip steak, rib steak or tenderloin.

What is the most popular meat at the moment?

Moving into the colder season we are seeing a move to lamb and pork roasts and lots of popular slow cooking cuts.

What is your favourite quick and easy meal for Winter?

Definitely a good Sheppard’s pie. A hearty chuck steak stew base and a mashed potato top. Serve it up with some peas and I’m good to go!

Thanks Tim!
