1. Soak 20 skewers in cold water for 30 minutes.
  2. Combine all ingredients in the food processor and process until consistently processed.
  3. Divide mixture into 20 portions and mould onto a skewer. Place onto a plate and into the fridge for 4 hours.
  4. Preheat a grill and lightly spray with olive oil spray. Cook skewers for 2 minutes on each of their 4 sides.
  5. Serve with sauces and flat bread if desired.
