1. Place the potato, flour, eggs, onion, garlic and thyme into a bowl and stir until combined.
  2. In a frypan, heat the oil and butter over  a medium heat and then add 2 tablespoon sized portions of potato mixture into rounded shapes, into the frypan. Cook for 3 minutes on each side or until golden brown.
  3. Drain on grease proof paper and serve immediately.
