  1. Preheat an electric frypan to a medium heat.
  2. Combine flours and yeast and mix well.
  3. In a 1 litre jug, whisk the sour cream, milk and egg yolk together until combined. Allow to stand 30 minutes.
  4. In a separate glass bowl, whisk egg whites to soft peaks and stir through with salt.
  5. Spray the frypan with a small amount of canola oil spray and add 1 tablespoon sized quantities of batter 3cm apart. Allow to cook for 2 minutes on the first side, then flip onto the other side for a further 1 minute. Repeat until all batter has been made into blinis.
  6. In a bowl, combine the sour cream, mustard and lime juice. Add 1 teaspoon to each blini and top with a piece of salmon.
