1. In a bowl, combine the ricotta, egg yolks, milk, butter and flour. Stir until just combined.
  2. In a separate bowl, whisk the eggs and sugar until soft peaks form. Fold through the batter and allow to stand for 2 minutes.
  3. Preheat a frypan over a medium heat for 3 minutes. Lightly spray with oil for .25 second each time.
  4. Add 1/4 cup of mixture to the pan and cook for 3 minutes, flip and cook for a further 2 minutes. Repeat until all batter has been cooked.
