Ingredients
- 1 tablespoon peanut oil
- 1 medium brown onion peeled, halved, thinly sliced
- 1 clove garlic peeled, minced
- 1/2 teaspoon lemon rind
- 2 tsp sweet chilli sauce
- 1/2 large red chilli thinly sliced
- 500 grams beef blade steak diced
- 1 teaspoon curry powder
- 270 ml light coconut milk
- 1 tablespoon kecap manis (sweet soy sauce)
- 1/2 cup crunchy peanut butter
- 2 tsp coriander leaves, to serve
Directions
- Turn the selection dial to the SAUTE setting on the pressure cooker and place the oil, onion and garlic into the bowl to sauté for 5 minutes.
- Add the lemon rind, chilli, sweet chilli sauce and curry powder and allow to sauté for 3 minutes.
- Pour the coconut, kecap manis, peanut butter and steak and stir to combine.
- Securely place and seal the lid onto the pressure cooker. Switch the control dial to setting 4 on the Kambrook manual pressure cooker, and 33 minutes (Soup / Curry setting) on the Kambrook digitial pressure cooker, and allow to cook.
- Release the pressure from the pressure cooker by turning the pressure release valve to the right.
- Serve with rice and coriander.
