Smoked Ham and Split Pea Soup

INGREDIENTS
- 200g dried green split peas, washed
- 250ml boiling water
- 2 eschallots, diced
- 1 clove garlic, minced
- 200g ham off the bone, roughly chopped
- 1 bay leaf
- 2 sprigs thyme
- 2 carrots, peeled, diced
- 2 stalks celery, diced
- 1 tsp black peppercorns
- 1/2 cup white wine
- 500ml vegetable stock
- 1⁄4 cup roughly chopped parsley
- 1 tbsp roughly shopped dill, to serve
- 4 slices sour dough, to serve
DIRECTIONS
- In a heatproof bowl, add the split peas and boiling water and allow to stand for 30 minutes.
- Place the split peas, water, eschallots, garlic, ham, bay leaf, thyme, carrot, celery, peppercorns, white wine and stock into the soup maker jug.
- Place the soup maker motor body/lid on to the soup jug.
- Select the ‘CHUNKY’ soup setting and then select the ‘START’ button.
- Select the ‘BLEND’ setting and then select the ‘START’ button.
- Serve soup with chopped parsley and sour dough bread.
