INGREDIENTS
1 tbsp olive oil
2 shallots, thinly sliced
1 clove garlic, thinly sliced
100g baby spinach leaves
½ tsp flaked salt
1 tsp lemon juice
50g cream cheese
50g feta cheese
1 loaf bread, sliced, to serve
DIRECTIONS
In a frypan, heat the olive oil and sauté the shallots and garlic for 1 minute. Add the baby spinach and stir until softened and wilted, approximately 2 minutes. Remove from the heat and allow to stand for 2 minutes.
Place the spinach mix, salt, lemon juice, cream cheese and feta cheese into the chopper bowl and place and secure the lid on top. Attach the stick mixer motor and blend until completely combined, approximately 30 seconds.
