Sticky Chicken and Cashew Rice
PREP TIME: 5 min, COOK TIME: 40 min, READY TIME: 45 min, SERVINGS: 4
Ingredients
1 kilogram chicken drumsticks
1 teaspoon sesame oil
1 tablespoon sweet chilli sauce
2 teaspoons soy sauce
2 teaspoons green curry paste
165 ml coconut cream
1/2 cup water
2 tablespoons honey
1/2 cup raw cashew nuts
To Serve
1/2 cup coriander leaves washed
1/4 cup cashew nuts roasted, crushed
4 cups white rice cooked
Directions
Place the chicken, oil, chilli sauce, soy, curry paste, coconut and water into the pressure cooker bowl and secure the lid. Select the casserole/curry setting or 33 minutes and allow to cook.
Stir through the honey and raw cashews and set to the sauté setting. Cook for 20 minutes, stirring occasionally.
Serve with coriander, chopped cashews and rice.
