Sweet Potato and Chickpea Soup

INGREDIENTS
- 400g sweet potato,2cm pieces
- 420g can chickpeas, drained
- 400g can diced tomatoes
- 1 brown onion, diced
- 2 cloves garlic, minced
- 500ml vegetable stock
- 1 tsp salt
- 1⁄4 cup mint leaves, finely chopped, to serve
- 2 tbsp olive oil, to serve
DIRECTIONS
- Place the sweet potato, chickpeas, tomatoes, onion, garlic, stock and salt into the soup maker jug.
- Place the soup maker motor body/lid on to the soup jug.
- Select the ‘SMOOTH’ soup setting and then select the ‘START’ button.
- Serve soup with mint leaves and 2 teaspoons of olive oil each.
