Two Potato Soup

Ingredients
- 2 large potatoes peeled, diced
- 1 large sweet potato peeled, diced
- 50 milligrams olive oil
- 1 large brown onion peeled, diced
- 2 teaspoons garlic minced
- 1 litre vegetable stock heated
- 10 slice sour dough bread
- 1/2 cup parmesan cheese grated
Directions
- In a frypan, preheat the olive oil and sauté the onion and garlic until golden brown. Add the potatoes and stir until coated.
- Pour over the stock and simmer for 30 minutes. Allow to cool for 5 minutes.
- Add 125ml of warm water and then blend the soup using a stick mixer until thick and consistent.
- Serve with your favourite herbs and crusty sour dough bread.
