Icing

DIRECTIONS 

  1. Place the flour, icing sugar, egg yolks, vanilla paste and cubed butter into the food processor. Process until the dough comes together, then pulse into a ball. Remove the dough from the food processor, roll into a disc and wrap in cling film and let rest in the refrigerator for 1 hour.
  2. Pre-heat oven to 170°C fan forced.
  3. Place the dough onto a lightly floured bench and roll to be 5mm thick. Using heart shaped cookie cutters, cut out heart shapes and place onto a lined baking tray. Cook for 11 minutes. Place the cooked biscuits on a cooling rack and let cool.
    Icing
  4. Place the egg whites into your bench mixer bowl and whisk until frothy, add the icing sugar, add a little lemon juice at a time until a thick / runny consistency is reached. Place 1/3 of the icing into a zip lock bag and seal. Set aside until required.
  5. With the remaining 2/3 of icing, add red food colouring to reach the desired colour.
  6. Place the icing into a zip lock bag and cut a little off the corner. Squeezing the bag to release the icing, pipe a border around the heart and then fill it in with the icing. Use the tip of a skewer to move the icing around and fill in the icing border. Let set.
  7. Cut a little tip off the end of the 1/3 icing and pipe tiny dots around the outside of the heart. Let set.
  8. Place into a cellophane bag and tie with a ribbon – give to your loved one.
