Zucchini, Feta and Thyme Open Tart

Ingredients
- 2 1/2 sheets frozen puff pastry defrosted
- 1 tablespoon peanut oil
- 2 large zucchini thinly sliced horizontally
- 1 cup feta crumbled
- 2 medium lemons zested
- 1 bunch thyme shredded
Directions
- Line a baking tray with baking paper and place the puff pastry onto the tray. Line the puff pastry with the zucchini and brush with the oil. Place into a preheated oven at 200°C for 20minutes. Remove from the oven and allow to cool.
- Top with feta, lemon zest and fresh thyme.
