Chicken Rice Paper Rolls

INGREDIENTS
- 200g packet rice paper sheets
- 600g chicken breast, poached, shredded
- 2 carrots, grated
- 1 cucumber, thinly sliced
- 100g snow peas, thinly sliced
- 4 shallots, thinly sliced
- ¼ cup coriander leaves
- ¼ cup basil leaves
- ¼ cup mint leaves
- ½ cup crunchy peanut butter
- 1/3 cup hoi sin sauce
- 1 tbsp rice wine vinegar
DIRECTIONS
- Fill a large bowl with warm water and place a rice paper sheet into it for approximately 10 seconds or until softened and slimey. Place the sheet onto a clean chopping board and fill with chicken, carrot, cucumber, snow peas, shallots, 1 coriander leaf, 1 basil leaf and 1 mint leaf.
- Using the instructions on the rice paper sheet packet, fold the left and right sides inwards and then roll the base over to close. Set aside on a tray and repeat until all are completed.
- In a bowl, combine the peanut butter, hoi sin and rice wine vinegar. Stir until it forms an even paste and serve with rice paper rolls.
