Pork, Apple and Thyme Sausage Roll

INGREDIENTS
- 2 tsp olive oil
- 1 brown onion, diced
- 1 clove garlic, minced
- 1 tsp fresh thyme
- 20g butter
- 1 tsp brown sugar
- 1 granny smith apple, peeled, diced
- 200g pork mince
- 1 tsp flaked salt
- ¼ cup bread crumbs
- 2 sheets frozen puff pastry, thawed
DIRECTIONS
- Using a frypan, heat the oil over a medium heat and then sauté the onion and garlic until golden brown. Add the thyme, butter, brown sugar and apples and allow to sauté for a further 4 minutes.
- Place cooked mixture into a bowl and combine with pork mince, salt and bread crumbs.
- Halve the mixture and place each batch into the centre of a puff pastry sheet. Roll the sides of the pastry in and then roll to form a sausage roll. Slice the long roll into 4-5 smaller sausage rolls.
- Preheat the air frying oven to 180°C and turn the timer dial to 5 minutes. Once the 'HEATING' light goes off, turn the timer dial to 15 minutes, place the rolls, one at a time into the Air Chef basket and allow to cook. Repeat to cook the second round.
