Chicken, Coconut and Sweet Potato Soup

INGREDIENTS
- 2 cups chicken stock
- 1 cup coconut cream
- 1 large sweet potato
- 1 large chicken breast, thinly sliced
- 1 tbs red curry paste
- 2 tsp fish sauce
- pinch of salt and pepper
DIRECTIONS
- Place the stock, cream, potato, chicken, paste, sauce, salt and pepper into the soup maker jug.
- Place the soup making blending lid on top and secure to the base.
- Select the ‘CHUNKY’ soup setting and then select the ‘START’ button.
- After cooking, remove the lid, serve and enjoy.
TIP: You can use the manual ‘PULSE’ setting at the end of the cooking time if you decide to chop up the soup slightly if you find your results a bit too ‘chunky’.
