Almond Blondie Christmas Trees

INGREDIENTS
- 200g caster sugar
- 3 eggs
- 200g unsalted butter, melted
- 1 tsp. vanilla paste
- 100g plain cake flour
- 100g almond meal
- 1 tsp. baking powder
- 200g white chocolate bits
- 80g chopped macadamia nuts
- ½ cup icing sugar
- Green food colouring
- 100’s and 1000’s
- Small edible stars
DIRECTIONS
- Pre-heat the oven to 180°C.
- Grease and line a 20x30cm slice tray.
- Beat the sugar and eggs together until light and fluffy. Slowly drizzle in the melted butter and add the vanilla paste.
- Sift together the flour, almond meal and baking powder and fold into the egg mixture.
- Fold in the white chocolate bite and macadamia nuts
- Pour into the prepared tray and bake for 30-35 minutes or until a skewer comes out clean when inserted into the centre.
- Let cool in the tray slightly and then cool on a wire cooling rack.
- Cut lengthways into 3 and then cut each length into triangles.
- In a small bowl, place the icing sugar and add 1 drop of green food colouring and 5ml of water. Stir until a thick pastes is formed (if a little more water is required, add a little more).
- Place the icing into a little sandwich bag and cut a tiny corner off and then slowly pipe the icing in zig zag drizzles on each triangle to resemble a Christmas tree. Sprinkle a few 100’s and 1000’s over the Christmas trees whilst the icing is still moist and place the stars at the top of the triangle.
