Banana Banoffee Pikelets

    INGREDIENTS

    • 1 cup self-raising flour
    • 150ml milk
    • 1 free range egg
    • 1 tsp bi-carb soda.
    • 20g butter, melted
    • 1 banana, sliced
    • 1 tbsp brown sugar
    • ¼ cup cream
    • Ice cream for serving

    DIRECTIONS

    1. Preheat Pancake Perfect Skillet at setting 6 until heating light turns off.
    2. In a bowl, combine the flour, milk, egg, bi-carb soda and butter.
    3. Lay the silicon pikelet rings in pan. Using a 1/3 cup measure, pour pancake batter into each pancake ring and place a couple of slices of banana on top and sprinkle with brown sugar. Cook for 3 minutes until air bubbles form and pop.  Remove the ring and flip the pancakes. Cook for a further minute.
    4. Once cooked, remove the pancakes.
    5. In the skillet, pour ¼ cup of cream and stir until well combined. Serve drizzled on the pancakes with ice cream.
