Brown Rice Salad with Blue Cheese and Pear

Ingredients
- 4 rice cups brown rice, rinsed
- 4 rice cups water
- 100g rocket lettuce, washed, dried
- ¼ cup mint leaves, thinly sliced
- 2 brown pears, cut into ¼’s, thinly sliced
- 200g blue cheese, crumbled
- ¼ cup balsamic glaze + extra to serve
Directions
- Place the rice and water into the pressure cooking bowl and stir well to combine.
- Press the ‘START/CANCEL’ button. Select the ‘BROWN RICE’ button and then the ‘START/CANCEL’ button and allow to cook until the pressure cooker has switched off.
- Release the pressure from the pressure cooker by turning the pressure release valve to the venting position.
- Remove the rice from the pressure cooking bowl and place into a large salad bowl. Add the rocket, mint, pear, blue cheese and balsamic glaze.
- Drizzle over extra balsamic glaze and serve immediately.
