Chicken and Mango Wraps

Ingredients
- 1 lime juiced
- 500 grams free range chicken breast fat trimmed
- 1 teaspoon ginger minced
- 1 teaspoon garlic minced
- 4 shallots thinly sliced
- 100 grams vermicelli noodles
- 10 iceberg lettuce leaves washed
- 1 large ripe mango flesh removed, diced (optional)
Directions
- In a frypan, heat the oil and add the chicken, ginger, garlic and shallots. Fry for 6 minutes or until chicken has browned, set aside.
- Fill a large bowl with warm water and submerge your noodles for 5 minutes, drain.
- Fill each lettuce leaf with equal amounts of noodles and chicken.
- Top with diced mango and fresh lime juice and roll to form a package.
