Cinnamon, Macadamia Loaves

Ingredients
- 4 x Bengal spice tea bags
- 125 grams butter softened
- 1 cup brown sugar
- 2 cups self-raising flour
- 3 teaspoons cinnamon ground
- 80 grams macadamia nuts crushed
- 2 x 59g free-range eggs lightly whisked
Directions
- Preheat a fan forced oven to 170°C. Spray 8 hole mini loaf pan with canola cooking spray to grease.
- In a 1 litre jug, place tea bags into 125ml of boiling water and allow to steep for 5 minutes. Remove tea bags and allow to stand for 2 minutes.
- Add butter and sugar to bowl and stir until butter has melted and sugar has dissolved.
- Fold through flour, cinnamon, nuts and eggs until just combined. Evenly distribute into mini loaf pans until they are filled 1cm under the rim.
- Place into the oven for 35 minutes or until a skewer can be removed, clean.
- Serve with a drizzle of honey and a good cup of tea!
