Ingredients
- 2 tablespoons olive oil
- 1 brown onion peeled, diced
- 2 clove garlic peeled, minced
- 1 x 35g taco seasoning mix
- 1 tablespoon tomato paste
- 1 x 400g can diced tomatoes
- 1 x 400g red kidney beans drained
- 10 small corn tortillas
- 1 cup tasty cheese grated
Directions
- Preheat a fan forced oven to 190°C.
- In a medium frypan, heat the oil over a low heat for 2 minutes. Add the onion and garlic and sauté for 5 minutes or until clear.
- Add the taco seasoning and the tomato paste; stir until it has formed a thick even paste.
- Add the tomatoes and kidney beans. Simmer over a low heat for 5 minutes, stirring regularly.
- Layer the base of a deep crockery dish (20cm wide) with tortillas and top with bean mixture. Sprinkle cheese over the top and place into the oven for 10 minutes.
- Serve with avocado and sour cream.
