Ingredients
- 500 grams potatoes peeled, cut 2cm x 2cm
- 1/4 cup pure cream
- 1 egg yolk
- 2 tablespoons olive oil
- 1 medium brown onion diced
- 1 clove garlic minced
- 500 grams beef mince
- 2 medium tomatoes diced
- 1/4 teaspoon rosemary chopped
- 1/2 cup peas (optional)
- 1 beef stock cube
Directions
- Preheat fan forced oven to 190°C.
- Place potatoes in a pot of cold water and boil until soft.
- Mash potatoes and then add the cream and egg yolk, stirring until thick and creamy. Set aside.
- Heat olive oil in a frypan and fry onion and garlic until golden.
- Add the mince to the frypan, cooking until browned and cooked through.
- Place tomatoes, rosemary, peas (if using) and stock cube into the frypan and stir until combined.
- Using 5 individual 15cm ramekins, spoon an equal amount of meat mixture into each. Top with mashed potatoes and place onto an oven tray.
- Bake for 10 minutes or until the potato is golden. Serve immediately.
