Pressure Cooker Spinach Lamb

    INGREDIENTS

    • 1 teaspoon coconut oil (or cooking oil of choice)
    • 3 cloves garlic, chopped finely
    • 1 leek, chopped
    • 1 teaspoon coriander
    • 1 teaspoon cumin
    • 3 cloves
    • 4 cardamon pods
    • ¼ teaspoon turmeric
    • 1 teaspoon salt
    • 6 grinds pepper
    • ¼ teaspoon garam masala
    • 800 grams diced lamb
    • 175 grams (about 1 cup tightly packed) fresh spinach leaves
    • 1 carrot, chopped
    • 1 capsicum, sliced
    • 100 ml vegetable stock

    SPINACH YOGHURT

    • 1 cup tightly packed spinach, chopped
    • 1 teaspoon sumac
    • ½ lemon, juiced
    • ½ cup natural yoghurt
    • Handful fresh coriander leaves

    DIRECTIONS

    1. Add the oil, garlic, leek, spices, salt and pepper to the base of the pan and turn the pressure cooker setting to Sauté.
    2. Stir and after a couple of minutes when the leek starts to soften, add the meat to seal. Stir to coat with the spices and cook for four to five minutes.
    3. Turn off the machine and add the vegetables and stock.
    4. Lock the lid and turn to the Stew function for 24 minutes.
    5. Once cooked, release the pressure and remove the lid.
    6. If there is excess liquid in the pan, turn to Sauté to reduce for three to five minutes.
    7. To make the yoghurt, stir the ingredients together.

    Serve with rice and topped with yoghurt.
