Asian Style Chicken Noodle Soup

Ingredients
- 4 shallots roots removed, thinly sliced
- 2 clove garlic minced
- 2cm piece ginger minced
- 1 litre chicken stock
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon fish sauce
- 300 grams chicken breast thinly sliced
- 1 cob corn kernels only
- 125 grams packet dried rice noodles
- 1 bunch coriander washed thoroughly, roughly chopped, to serve
Directions
- Place the shallots, garlic, ginger, stock, soy, lime juice, fish sauce, chicken, corn and noodles into the soup maker and securely place the lid on top.
- Select the ‘chunky’ soup setting and press START and allow to cook.
- Top with coriander and serve immediately.
