Cajun Chicken Wings with Blue Cheese Sauce

Makes 12 wings
INGREDIENTS
- 3 litres vegetable oil, for deep frying
- 2 tbsp plain flour
- 1 tbsp mild Cajun spice
- 1 tbsp parsley flakes
- 1 tsp garlic powder
- 12 chicken wings
- ½ cup sour cream
- ¼ mayonnaise
- 100g blue cheese
- 1 tsp flaked salt
- 1 tsp lemon juice
DIRECTIONS
- Fill and preheat a 3 litre deep fryer to 180C.
- In a bowl, toss together the flour, Cajun spice, parsley and garlic powder and then coat the chicken wings.
- Place the chicken wings into the deep fryer basket, 6 at a time in two batches. Cook for approximately 5 minutes or until golden brown.
- To make the blue cheese sauce, combine the sour cream, mayonnaise, blue cheese, salt and lemon juice in a bowl and stir until it forms a smooth paste. Serve with Cajun chicken wings.
