Roasted Root Vegetables

    INGREDIENTS

    • 4 small carrots, peeled and cut in ½ lengthways
    • 4 large Desiree potatoes, peeled and cut into wedges
    • 1 red onion, peeled and cut into wedges
    • 1 sweet potato, peeled and cut into chunks
    • 1 turnip, peeled and cut into small pieces
    • 1 tbsp. vegetable oil
    • 3 sprigs fresh rosemary
    • 2 tsp. sea salt
    • ¼ tsp. fresh black pepper

    DIRECTIONS

    1. Toss the prepared vegetables in a large bowl with the oil, thyme, salt and pepper.
    2. Place into the air fryer basket. Close the drawer.
    3. Press the ON/OFF button to turn on the air fryer. Press the MENU button repeatedly until the VEGETABLES function is illuminated. Press START/ PAUSE to begin the function.
    4. Shake throughout the function to ensure even colouring. Remove and serve hot.
