Spicy Bean Soup

INGREDIENTS
- 2 tbsp olive oil
- 1 red onion, diced
- 2 cloves garlic, crushed
- ½ tsp dried chilli flakes
- 1 medium zucchini, diced
- 8 green beans, 2cm pieces
- 410g can red kidney beans, drained
- 400g can diced tomatoes
- 1 tsp salt
- 600ml vegetable stock
- ¼ cup coriander leaves, roughly chopped
- ¼ cup sour cream, to serve
DIRECTIONS
- Place the oil, onion, garlic, chilli, zucchini, green beans, red kidney beans, tomatoes, salt and stock into the soup maker jug.
- Place the soup maker blending lid on top and secure to the base.
- Select the ‘CHUNKY’ soup setting and then select the ‘START’ button.
- Stir through the red kidney beans and coriander leaves and serve soup with a scoop of sour cream.
