Mini Banana and Raspberry Cakes

    INGREDIENTS

    • 1 1/4 cups of self raising flour
    • 1/4 cup of caster sugar
    • 1/2 cup of milk
    • 1 egg - lightly beaten
    • 1/2 teaspoon of vanilla essence
    • 75g of butter - melted and cooled
    • 1 large mashed banana
    • 3/4 cup of frozen raspberries

    DIRECTIONS

    1. Lightly grease and line the base of 2 x 9cm square cake tins.
    2. Melt the butter and set aside to allow it to cool slightly.
    3. Mash the banana and set aside until needed.
    4. Sift the self raising flour into the bowl of your Kambrook Stand Mixer before adding the caster sugar, egg, milk, vanilla essence, cooled butter and mashed banana and mix on a low speed until ingredients have just combined - its ok if the mixture is still a little lumpy.
    5. Remove the bowl from the stand mixer and add the frozen raspberries and gently fold through with a large metal spoon.
    6. Preheat your Kambrook Chef Air Frying Oven to 160 degrees.
    7. Divide the mixture between your two cake tins and place one into your preheated Chef Air Frying Oven and bake for 20 minutes. Check your cake with a wooden skewer to make sure its cooked through, if not cook for a further 5 minutes.
    8. Repeat the above step to cook the second cake.
    9. Serve cakes as is or ice with simple icing.
    10. These cakes can also be frozen for up to one month.
