Banana Banoffee Pikelets

INGREDIENTS
- 1 cup self-raising flour
- 150ml milk
- 1 free range egg
- 1 tsp bi-carb soda.
- 20g butter, melted
- 1 banana, sliced
- 1 tbsp brown sugar
- ¼ cup cream
- Ice cream for serving
DIRECTIONS
- Preheat Pancake Perfect Skillet at setting 6 until heating light turns off.
- In a bowl, combine the flour, milk, egg, bi-carb soda and butter.
- Lay the silicon pikelet rings in pan. Using a 1/3 cup measure, pour pancake batter into each pancake ring and place a couple of slices of banana on top and sprinkle with brown sugar. Cook for 3 minutes until air bubbles form and pop. Remove the ring and flip the pancakes. Cook for a further minute.
- Once cooked, remove the pancakes.
- In the skillet, pour ¼ cup of cream and stir until well combined. Serve drizzled on the pancakes with ice cream.
