Buttermilk Pancakes with Whipped Cream and Cherry Jam

    • 375ml milk
    • 59g free range egg
    • 2 tsp vanilla essence
    • 2 cups self raising flour
    • ¼ tsp bicarb soda
    • ¼ cup caster sugar
    • 300ml pure cream, whipped
    • ½ cup cherry jam or preserve


    1. Preheat Kambrook Skillet Pan at setting 6 until heating light turns off.
    2. In a jug, combine the milk, egg and vanilla and whisk to combine.
    3. In a bowl, place the flour, bicarb and caster sugar and create a well in the centre. Pour the milk mixture into the centre of the well and whisk inwards insuring there are no lumps present.
    4. Using a 1/3 cup measure, pour 1/3 cup of pancake batter into the frypan and place the glass lid on top and let cook for 2 minutes.
    5. Flip the pancake and place the glass lid on top and let cook for 2 minutes 30 seconds.
    6. Serve with cream and cherry jam.
