Fish for Good Friday
With Easter fast approaching, we’ve compiled some of our favourite seafood recipes and tips to help you plan your Good Friday menu.
Tips:
- Build a relationship with your fishmonger as he or she will be able to guide you in the right direction and can tell you what’s in season. This means you pay the best price possible for the best quality produce.
- Fresh fish smells like the sea – it shouldn’t smell ‘fishy’.
- Look for glossy, clear eyes and bright red gills - steer clear of gills that have oxidised to brown or grey.
- The texture of the flesh should be firm while the scales will be shiny and tight.
